Brinjal Fry / Egg Plants Dry Curry / Vankaya Vepudu

  • 1/4 kg Brinjal/Vankayalu
  • 1/2 sp Red Chilli Powder
  • 1 pinch Turmeric Powder
  • Salt to taste
  • 5 sp Oil
  • Curry Leaves


  1. Wash and cut brinjal into small & thin pieces.
  2. Apply salt and turmeric powder and keep it aside.
  3. After 5 mins squeeze the water from brinjal pieces.
  4. Now heat oil in a pan & add the squeezed pieces
  5. Fry in medium heat, keep checking in between.
  6. When it done, add red chilli powder and curry leaves.
  7. Stir well and fry for couple of mins and turn off the flame.
  8. The brinjal fry is ready, transfer into a serving bowl& with sambar.
