Amaranth Leaves Pulav / Totakura Rice - How to prepare Totakura Pulav

Ingredients

  • 1 cup chopped Amaranth Leaves
  • 1 cup Rice
  • 2 Green Chillies chopped
  • 1 Onion chopped
  • 1/2 sp Ginger Garlic Paste
  • 1" Cinnamon Stick/Dalchini
  • 1/2 sp Cumin Seeds
  • 2 Elaichi Pods
  • 3 Cloves
  • Salt to taste
  • 3 tbsp Oil

Instructions

  1. Wash rice in a cooker bowl and add 2 cups of water, keep aside.
  2. Heat 1 tbsp oil in a pan add amaranth leaves and fry for 2 mins on low-medium flame, remove from the flame and keep aside. In the same pan add remaining oil and add cloves, cinnamon, elachi pods, cumin seeds and fry for 30 secs.
  3. Add onion, green chillies and fry slightly, then add ginger garlic paste and stir for 30 secs, next add fried amaranth leaves, salt and stir well. Add fried ingredients to soaked rice and pressure cook up to 3 whistles. Allow it to cool.
  4. Once done remove the lid and mix well. Now Amaranth leaves pulav is ready, transfer into a serving bowl and serve hot. It's easy to prepare. No need raita or pickle.
