Brinjal and Tomato Curry

  • 1/4 kg Brinjal / Vankayalu
  • 2 Green Chillies chopped
  • 1 Onion chopped
  • 1 Tomato chopped
  • 1/2 sp Ginger Garlic paste
  • 1 pinch Turmeric powder
  • 1/2 sp Red chilli powder
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Chana Dal
  • 1/2 sp Urad Dal
  • 1 Red Chilli crocked
  • Curry leaves
  • 2 sp Oil


  1. Wash and cut brinjal into small pieces & keep aside, always preserve the chopped brinjal in water & add a pinch of salt.
  2. Heat oil in a fry pan add popu ingredients and fry for 2 mins, when done add curry leaves, green chillies, onion pieces and stir well.
  3. Add ginger garlic paste and fry for 30 secs then add chopped tomato & stir-cook for 2 mins with a lid.
  4. Next add vankaya mukkalu, salt, turmeric, red chilli powder and stir well, sprinkle little water and mix well, cook on medium flame with lid .
  5. Keep checking in between, when the curry is done then turn off flame and, transfer into a serving bowl.
  6. Vankaya tomato curry is ready to serve, serve with rice or roti.
