Gutti Vankaya Kura / Stuffed Brinjal Curry

  • 6 nos Brinjals / Vankayalu / Eggplant
  • 4 sp Chana Dal
  • 4 sp Urad Dal
  • 1 sp Coriander Seeds
  • 6 Red Chillies
  • 1 inch Tamarind flake
  • 1 pinch Turmeric Powder
  • 3 sp grated Dry Coconut
  • 5 sp Oil
  • Salt to taste


  1. Heat 1 sp oil in frying pan add chana dal, urad dal, coriander seeds, red chillies and stir-fry them on a low flame until it turns golden brown in color, then remove from the pan.
  2. When cool grind along with salt, tamarind, turmeric & coconut into a coarse powder.
  3. Slit brinjals into four with out separating, stuff some amount of the prepared powder in each brinjal.
  4. Now heat remaining oil in a pan and carefully place each stuffed brinjal into it, cover with a flat lid and pour little water on it.
  5. Keep checking in between, when they are cooked properly, then remove from the flame.
  6. Transfer into a serving bowl, stuffed brinjal curry/gutti vankaya kura is ready to serve.
