Chilagadadumpa Vankaya Kura / Sweet Potato Brinjal Curry

Ingredients

  • 1 no Sweet Potato
  • 3 Brinjals chopped
  • 1 Onion chopped
  • 2 Green Chillies chopped
  • 1 Tomato chopped
  • 1/2 sp Red Chilli Powder
  • 1 pinch Turmeric Powder
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Chana Dal
  • 1/2 sp Urad Dal
  • 1 Red Chilli Crocked
  • 3 sp Oil
  • Curry Leaves

Instructions

  1. Wash, peel sweet potato and cut into small cubes.
  2. Heat oil in a pan add popu ingredients and fry.
  3. When they splutter add curry leaves, green chilli, onion pieces and fry.
  4. Once done add tomato pieces and stir- fry for a couple of mins
  5. Now add sweet potato pieces and stir well.
  6. Sprinkle little water & mix well, cook with cover on low flame.
  7. When it 3/4 done add chopped brinjal and mix well.
  8. Add salt, turmeric powder, red chilli powder and stir well.
  9. Close the lid again and cook on low flame for 8 - 10 mins.
  10. When the curry is done, remove from the heat & transfer into a serving bowl.
  11. Sweet potato brinjal curry is ready to serve. Serve with rice or rotis.
