Thotakura Iguru Kura / Amaranth Leaves Curry

Ingredients

  • 2 cups chopped Thotakura
  • 1 Onion chopped
  • 3 Green Chillies slit lengthwise
  • 1 pinch Turmeric Powder
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Urad Dal
  • 1 Red Chilli crocked
  • Curry Leaves
  • 2 sp Oil

Instructions

  1. Heat oil in a pan add popu ingredients and fry for 2 mins.
  2. Once done add curry leaves, onion, green chilli pieces & stir.
  3. Fry until the onions are tender add chopped thotakura, turmeric powder, salt & stir, cover and cook on low flame.
  4. If required add little water and cook with cover.
  5. When it done remove the lid and fry for 2 mins with out cover.
  6. Thotakura kura is ready to serve, serve with rice or chapati.
