Vangi Poha / Flattened Rice With Brinjal


Vangi Poha / Brinjal Atukulu

  • 1 cup Thick Poha / Flattened Rice
  • 3 no Brinjal / Eggplant
  • 1 Onion finely chopped
  • 1 sp chopped Ginger
  • 3 Green Chillies chopped lengthwise
  • 1/4 sp Turmeric Powder
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Chana Dal
  • 1/2 sp Urad Dal
  • 2 dry Red Chillies
  • 5 to 6 Cashews
  • Curry Leaves
  • 2 sp Oil


  1. Wash and soak poha for 2 mins, drain well and keep aside, wash and cut brinjal into thin long stripes.
  2. Heat oil in a pan add cashews and fry, then remove from the pan and keep aside, add popu ingredients to the same pan and fry.
  3. Once done add green chillies, onion, curry leaves and stir for 1 min, then add chopped brinjal and stir, add turmeric powder, salt and mix well.
  4. Sprinkle little water over it and mix well, cook with cover till the curry is done add drained poha to it and mix thoroughly.
  5. Let it cook with lid for couple of minutes, turn off the flame and transfer into a serving bowl.
  6. Now vangi poha is ready to serve, garnish with fried cashews and serve hot.
