Kaju Tomato Curry / Cashew Tomato Masala

  • 1 cup Tomato Puree
  • 1 big Onion chopped
  • 2 Green Chillies roughly chopped
  • 15 Cashew Nuts
  • 1/2 sp Ginger Garlic Paste
  • 1 sp Red Chilli Powder
  • 1/2 sp Coriander Powder
  • 1 pinch Turmeric Powder
  • 2 sp Kasuri Methi
  • 1" Cinnamon Stick
  • 1 Bay leaf
  • 4 Cloves
  • 2 sp Butter
  • 1/4 cup Fresh Cream
  • Salt to taste
  • chopped Coriander Leaves
  • for Garnishing :
  • few chopped Coriander Leaves
  • 2 Onion slices
  • 2 Lemon wedges
  • 2 sp Butter


  1. Heat 2 sp oil in a pan add cashew nuts and roast them until light golden brown & remove from the pan and keep aside.
  2. In the same pan add chopped onions, green chillies and fry till soft then remove from the pan & let it cool for a couple of mins.
  3. Once cooled grind them into a smooth paste along with ginger garlic paste & keep aside.
  4. Heat butter in a pan add bay leaf, cloves, cinnamon and fry for 30 secs, then add onion paste and cook for 2-3 mins on low flame.
  5. Add turmeric powder, red chilli powder, coriander powder and mix well.
  6. Add tomato puree, salt and stir-cook for 2 mins then add 1/2 cup of water and mix well, allow it to cook for 3 mins on low flame adding water if necessary.
  7. Add fried cashews, chopped coriander leaves, crushed kasuri methi and mix well, finally add fresh cream and mix very well.
  8. Now kaju tomato curry is ready, transfer into a serving bowl and top it with butter and serve hot with chapati or roti.
