Eggplant Sandwich / Brinjal Sandwich

Ingredients

  • 4 nos Bread Slices
  • 3 nos Brinjal/Vankayalu
  • 1 small Onion finely chopped
  • 1 Green Chilli finely chopped
  • 1 sp finely chopped Garlic
  • 1 small Tomato chopped
  • 1 pinch Turmeric Powder
  • 1 sp Lemon Juice
  • enough Salt
  • 2 sp Oil
  • 2 sp Butter
  • chopped Coriander Leaves
  • chopped Mint Leaves

Instructions

  1. Wash brinjals and remove the stems and keep aside, heat 1 sp oil in a pan add brinjal and cook with cover.
  2. When done remove from the pan and allow it to cool, once cooled remove the skin and mash it well.
  3. Heat remaining 1 sp oil in a pan add chopped garlic, onion, green chillie and stir-fry for 1 min then add chopped tomato and cook for 1 min.
  4. Now add chopped coriander, mint leaves, mashed brinjal, salt, turmeric powder and mix well, cook on low flame for one more min.
  5. Take a bread slice and spread this prepared brinjal mixture over the slice and sprinkle chopped coriander leaves on top & close it with another one.
  6. Apply butter on the outer sides of the bread slices, do the same with the remaining bread slices, then put them in the toaster and toast them.
  7. when done remove from the toaster and place on to a serving plate, now brinjal/eggplant sandwiches are ready, serve hot with tomato ketchup.
