Spicy Mint Powder / Pudina Karam / Pudina Podi

Ingredients

  • 1 Bunch Pudina/Mint Leaves
  • 5 Red Chillies
  • 1 sp Coriander Seeds
  • 1/4 sp Black Pepper
  • 1/2 sp Cumin Seeds
  • 1 sp Chana Dal
  • 1 sp Urad Dal
  • 3 Garlic Cloves
  • 1/4 sp Oil
  • Salt to taste

Instructions

  1. Wash pudina leaves thoroughly and let the water drain out, then pat them dry with a cloth.
  2. Once dry, heat a pan add mint leaves and stir-fry for 1 min on medium flame, once done remove from the pan.
  3. Add in red chillies, coriander seeds, cumin seeds, black pepper and dry roast until light brown in color & take them out in a plate.
  4. Now add oil to the same pan and add chana dal, urad dal and stir-fry till golden brown then remove from heat & allow it cool.
  5. Once cooled grind them into a coarse powder along with salt and garlic cloves, now spicy mint/pudina powder is ready, store it in an airtight container.
  6. Serve pudina karam with plain rice and also be served with breakfast items like idly, dosa, upma and pongal.
