Curry Leaves Onion Rice / Karivepaku Onion Rice / Karivepaku Ullipaya Annam

Ingredients

  • 1 cup Cooked Rice
  • 1 Onion chopped
  • 2 Red Chillies
  • 1 sp chopped Garlic
  • 1 sp Lemon Juice (optional)
  • Salt to taste
  • 3 sp Oil
  • For Curry Leaves Powder :
  • 1/2 cup Curry Leaves
  • fistful dry Coconut Pieces
  • 5-6 Dry Red Chillies
  • 2 Garlic Cloves
  • 1/2" inch Cinnamon Stick
  • 2 Cloves
  • 1/2 sp Oil

Instructions

  1. Heat 1/2 sp oil in a pan & add powder ingredients except curry leaves and fry for 1 min, then add curry leaves and stir.
  2. Stir-fry till the leaves change its color then turn off the flame and keep aside to cool, once cooled grind them into a coarse powder.
  3. Meanwhile, put the cooked rice in a mixing bowl & set aside, heat oil in a pan add chopped onion, garlic, red chillies and fry for a min.
  4. Then add ground curry leaves powder and stir well, fry for another one minute on low-medium flame.
  5. Add cooked rice, salt to the pan and mix well until combined and fry it high flame for a couple of mins then turn off the flame.
  6. Now curry leaves onion rice is ready, transfer into a serving bowl and serve hot.
