Stuffed Brinjal Curry With Coriander Leaves / Kothimeera Gutti Vankaya Kura

Ingredients

  • 3 no Brinjal/Vankayalu/Eggplant
  • 1 small cup chopped Coriander Leaves
  • 2 Green Chillies
  • 1 pinch Turmeric Powder
  • 2 sp Besan/Gram Flour
  • Salt to taste
  • 3 sp Oi

Instructions

  1. Clean, wash and finely chop fresh coriander leaves and grind along with green chilies into a coarse paste, then add besan, salt, turmeric powder & blend it again and keep aside.
  2. First cut off the crown of the brinjals nd wash them thoroughly, cut brinjals into 4 pieces without separating, now stuff this prepared coriander paste into brinjals and keep aside
  3. Heat oil in a pan & carefully place them, cover with a flat plate and pour 1/2 cup of water on the plate and cook on medium heat, gently turn brinjals once or twice.
  4. Once the brinjals are soft then remove from the flame & transfer into a serving bowl.
  5. Now stuffed brinjal curry with coriander leaves are ready, garnish with fresh coriander leaves and serve hot.
