Pressure cook chopped carrot with enough salt and turmeric powder, once done turn off the flame and allow it to cool. After that drain them. Heat oil in a pan add popu ingredients and fry, when done add chopped onion, curry leaves and stir-fry until the onions are soft.
Add in cooked carrot and stir-fry for 2 mins on low-medium flame, then add curry powder and mix well and cook for a while. Now carrot onion fry curry is ready, turn off the flame and transfer into a serving bowl and serve with rice or roti.
