1 cup Proso Millet Rice/Varigalu
2 sp Chana Dal
2 sp Urad Dal
2 sp Toor Dal
6 Red Chillies
1 pinch Hing/Inguva
1 Onion finely chopped
2 Green Chillies finely chopped
chopped Coriander Leaves
chopped Curry Leaves
1/2 sp Cumin Seeds
Salt to taste
Oil for dosa frying
Wash, soak the proso millet rice and dals together for 2 hours along with red chillies and keep aside.
Once done grind them into a coarse paste by adding enough water and transfer to a mixing bowl. Then add remaining ingredients except oil and mix well, now proso millet adai batter is ready, the batter should not need to be fermented.
Heat a griddle with little oil, when hot pour a ladle full of batter over the griddle and spread it carefully with back of the ladle. Now apply 1 sp oil around the edges of the dosa and cook with a lid, once it's done, turn it to the other side, apply little oil and cook on low flame for 1 min.
Repeat the same with remaining batter, now South Indian healthy breakfast recipe proso millet adai is ready, serve hot with coconut chutney or allam chutney.
