Blend sugar along with elaichi pods and keep aside. Heat 3 tbsp ghee in a pan add chopped cashew nuts and fry, once done remove from the pan and keep aside.
Add grated carrot to the same pan and mix well. Saute until the raw smell goes off, then remove it to a mixing bowl. Heat remaining ghee to the same pan add rava/sooji/semolina and stir-fry on slow fire till it turns slightly brown.
Then turn off the flame and add it to fried carrot and mix well. Now add ground sugar, fried cashew nuts and mix thoroughly, keep aside with cover for 10 mins. After that mix well and roll the carrot mixture into laddus, now carrot rava laddus are ready to serve.
