Menthi Beerakaya Kura / Ridge Gourd Fenugreek Leaves Curry

Ingredients

  • 2 cups Beerakaya Mukkalu/Ridge Gourd Pieces
  • 2 cups chopped Menthi Kura/Fenugreek Leaves
  • 1 pinch Turmeric Powder
  • 1 sp Coriander Powder
  • 1 sp Red Chilli Powder
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Chana Dal
  • 1/2 sp Urad Dal
  • 1 Red Chilli Crocked
  • Curry Leaves
  • 2 sp Oil

Instructions

  1. Heat oil in a pan add popu ingredients and fry, once done add curry leaves and stir.
  2. Add chopped ridge gourd, fenugreek leaves & mix, add salt, turmeric powder & stir well, cover and cook on low flame.
  3. Keep stirring in middle, add in little water if needed.
  4. After that add coriander powder, red chilli powder and mix it well, cook for a couple of mins and turn off the flame.
  5. Menthi beerakaya kura is ready & transfer into a serving bowl and serve with rice or rotis.
