Wash and soak foxtail millet for 10 mins and then cook in a pressure cooker or in a rice cooker with two cups of water. When done put the cooked millet rice in a mixing bowl and set aside.
Heat oil in a pan add mustard seeds, cumin seeds, red chillie, hing, peanuts and fry. Once done add chopped green chillies, curry leaves and stir-fry for a while. To this add turmeric powder and fry for 30 sec then pour fried popu over the cooked foxtail rice.
Add salt, lemon juice and mix very well. Lastly add chopped coriander leaves and mix well. Now foxtail lemon rice is ready, transfer into a serving bowl and serve.
