- 1 cup Rice
- 1 cup chopped Tomatoes
- 2 Green Chillies slit lengthwise
- 1 sp chopped Ginger
- 3/4 sp Garam Masala Powder
- 1/4 sp Turmeric Powder
- fistful Mint Leaves
- 1 small piece Cinnamon Stick
- 3 Elaichi Pods
- 5 Cloves
- Salt to taste
- 3 sp Oil
Wash and soak rice with two cups of water in a rice cooker bowl for 10 mins and keep aside.
Heat oil in a pan add cloves, cinnamon, elaichi pods and fry for 5 secs, then add chopped green chillies, ginger and fry for a minute. Add in chopped tomatoes and stir-cook for 2 mins, then add turmeric powder, red chilli powder and fry well.
Add chopped mint leaves and stir-cook for 2 mins on low-medium flame, add garam masala powder and stir it well.
Transfer the fried tomato mixture to rice cooker bowl, add enough salt and mix everything well. Now set to cook.
When done mix it well, now Tomato Rice without Onion & Garlic is ready, transfer to a serving bowl and serve hot with raita.
