Ingredients

  • 1 cup Urad Dal
  • 1 cup chopped Amaranth Leaves/Thotakura
  • 1 Onion finely chopped
  • 2 sp Ginger Green Chilli Paste
  • few chopped Mint Leaves/Pudina
  • few chopped Curry Leaves
  • Salt to taste
  • Oil for deep fry

Instructions

  1. Wash and soak urad dal for 2 hours and then grind them into a coarse paste and transfer to a mixing bowl. Add chopped onion. ginger green chilli paste, curry leaves, mint leaves and mix well.
  2. To this add chopped thotakura/amaranth leaves, salt and mix everything well, if needed add a little water and mix well. Now thotakura vada batter is ready, take lemon sized ball from the batter and flatten it slightly into a vada shape on a plastic sheet.
  3. In the meantime, heat oil in a pan on medium heat, once hot drop gently in the hot oil. Fry it till light golden brown, then remove from the oil and place on a paper towel to drain excess oil. Repeat the same process with the remaining batter. Now thotakura garelu are ready. Serve hot with chutney or tomato sauce.
