Mixed Veg Gravy Curry / Mixed Vegetable Sabji – how to make Mixed Veg Masala Curry
Ingredients
- 1 cup chopped Vegetables (Beans,Carrot,Potato,Cauliflower)
- 1 small cup Tomato Puree
- 1 Onion chopped finely
- 2 Green Chillies Slit lengthwise
- 1 sp Ginger Garlic Paste
- 1/2 sp Garam Masala Powder
- 1/2 sp Red Chilli Powder
- 1 sp Coriander Powder
- 1 pinch Turmeric Powder
- 1/4 cup Yogurt
- 3 sp Cream
- Hing/Inguva
- 2 pieces Cinnamon Stick
- 2 nos Bay leaves
- chopped Coriander Leaves
- few Curry Leaves
- Salt to taste
- 3 sp Oil
Instructions
- Wash and pressure cook chopped vegetables with little salt and turmeric powder, once done drain them and reserve the stock, keep aside.
- Heat oil in a pan add cinnamon, bay leaves and fry for 10 secs, add in chopped onion, green chillies, curry leaves, hing and stir-fry for 2 mins till soft, then add ginger garlic paste and saute for a min, now add tomato puree and mix well. Cook it until the raw smell goes away.
- In the meantime, mix turmeric powder, red chilli powder, coriander powder, garam masala with curd and make a paste. Then add it to pan and mix, cook it well till the oil starts leaving the sides.
- Now add cooked vegetables along with the reserved water and salt. Stir well and cook for 5 mins with cover on low-medium flame. Lastly add cream, chopped coriander leaves and mix well. Now mixed veg masala curry is ready, turn off the flame and transfer into a serving bowl and serve with puri or chapathi.
