Mixed Veg Gravy Curry / Mixed Vegetable Sabji – how to make Mixed Veg Masala Curry

Ingredients

  • 1 cup chopped Vegetables (Beans,Carrot,Potato,Cauliflower)
  • 1 small cup Tomato Puree
  • 1 Onion chopped finely
  • 2 Green Chillies Slit lengthwise
  • 1 sp Ginger Garlic Paste
  • 1/2 sp Garam Masala Powder
  • 1/2 sp Red Chilli Powder
  • 1 sp Coriander Powder
  • 1 pinch Turmeric Powder
  • 1/4 cup Yogurt
  • 3 sp Cream
  • Hing/Inguva
  • 2 pieces Cinnamon Stick
  • 2 nos Bay leaves
  • chopped Coriander Leaves
  • few Curry Leaves
  • Salt to taste
  • 3 sp Oil

Instructions

  1. Wash and pressure cook chopped vegetables with little salt and turmeric powder, once done drain them and reserve the stock, keep aside.
  2. Heat oil in a pan add cinnamon, bay leaves and fry for 10 secs, add in chopped onion, green chillies, curry leaves, hing and stir-fry for 2 mins till soft, then add ginger garlic paste and saute for a min, now add tomato puree and mix well. Cook it until the raw smell goes away.
  3. In the meantime, mix turmeric powder, red chilli powder, coriander powder, garam masala with curd and make a paste. Then add it to pan and mix, cook it well till the oil starts leaving the sides.
  4. Now add cooked vegetables along with the reserved water and salt. Stir well and cook for 5 mins with cover on low-medium flame. Lastly add cream, chopped coriander leaves and mix well. Now mixed veg masala curry is ready, turn off the flame and transfer into a serving bowl and serve with puri or chapathi.
