Ingredients
- 1 cup Rice
- 1/2 cup Masoor Dal/Split Red Lentil
- 1/2 cup Potato Cubes
- 1/4 cup Carrot Pieces
- 1/4 cup chopped Green Beans
- 2 Green Chillies slit lengthwise
- 1 sp finely chopped Ginger
- 1 pinch Turmeric Powder
- 3/4 sp crushed Black Pepper
- 1/2 sp Cumin Seeds
- 1 pinch Hing
- 4-5 Cashew Nuts
- few Curry Leaves
- 4 sp Ghee+Oil
- 4 cups Water
- Salt to taste
Instructions
Wash and soak rice and masoor dal for 20 mins, then drain well and keep aside. Heat ghee+oil in a pressure cooker add cumin seeds, crushed pepper, hing and fry for a while. Then add cashew nuts, chopped ginger, green chillies and curry leaves.
Fry for a minute on low-medium flame, add chopped vegetables and stir-fry on a medium flame for another 2 minutes. Then add in soaked and drained dal+rice, turmeric powder and mix well.
Add 4 cups of water and enough salt, mix well and pressure cook for 3 whistles. Once done turn off the heat and allow it to cool. Once cooled remove the lid and mix well. Now veg masoor dal khichdi is ready, transfer into a serving bowl and serve hot with chutney or sambar.
