Wash and cut watermelon into big chunks, then remove all the red parts and keep aside. Then great the rind (white part of watermelon) with a grater and squeeze it. Grease a plate with little ghee and keep aside. Heat ghee in a pan when hot, add squeezed rind and stir-fry for 2 mins on low-medium flame until the raw smell goes away. Once the raw smell goes off add grated fresh coconut and stir-fry for a couple of mins on low-medium flame. Then add in sugar, elaichi powder and mix. Cook on medium heat, stir continuously until the mixture turns thick and leaves the sides of the pan. Remove from the flame and pour in a greased plate and spread evenly. sprinkle chopped dry fruits on top and press them gently. Let it leave for some time and cut into desired pieces.
