Ingredients
- 1 no Drumstick chopped/Munakkaya Mukkalu
- 3 nos Brinjal/Vankayalu chopped
- 2 Green Chillies chopped
- 1 Tomato chopped
- 1 Onion chopped
- small marble size Tamarind
- 1 pinch Turmeric Powder
- 1/2 sp roasted Mustard & Methi Seeds Powder
- 1 sp Red Chilli Powder
- 1 sp Jaggery
- Salt to taste
For Popu :
- 1/2 Mustard Seeds
- 1/2 sp Chana Dal
- 1/2 sp Urad Dal
- 1/4 sp Cumin Seeds
- 1 pinch Methi Seeds
- 1 Red Chilli crocked
- 1 pinch Hing
- Curry Leaves
- chopped Coriander Leaves
- 2 sp Oil
Instructions
Wash and soak tamarind in a cup of water and keep aside. Heat oil in a pan add popu ingredients and fry, once done add curry leaves, chopped onion, green chillies and fry for a while.
Add chopped vegetables and stir. Then add in turmeric powder, little salt (for veggies) and mix well.
Sprinkle little water and cook with a lid. Cook for 4 or 5 minutes until veggies are soft, then add the tamarind extract, red chilli powder, salt and bring to the boil.
Then add mustard & methi seeds powder, jaggery and mix it well, let it boil for a couple of mins until it becomes thickens.
