Ingredients

  • 1 small cup Toor Dal
  • few Cauliflower florets
  • 3 no Green Beans trim nd chopped
  • 1 Potato peeled nd chopped
  • 1 no Carrot peeled nd chopped
  • fistful Green Piece
  • 1 pinch Turmeric Powder
  • 1″ Tamarind Flake
  • Salt to taste

For Paste :

  • 1 sp Chana Dal
  • 1 sp Urad Dal
  • 1 sp Coriander Seeds
  • 1 sp Black Pepper Corns
  • fistful Coconut Pieces
  • 2 brocken Red Chillies
  • 1/2 sp Oil

For Popu :

  • 1/2 sp Mustard Seeds
  • 1/4 sp Cumin Seeds
  • 1/2 sp Urad Dal
  • 1/2 sp Chana Dal
  • 1 big pinch Inguva
  • chopped Coriander Leaves
  • Curry Leaves
  • 2 sp Oil

 

Instructions

Wash toor dal well, pressure cook toor dal along with chopped vegetables, once done remove from the heat and set aside to cool down completely. After that open the lid and remove the dal bowl from the cooker.

In the mean time, heat 1/2 sp oil in a pan add above paste ingredients and fry, then add coconut pieces and fry for a while (tamarind flake), remove from the flame and allow it to cool. Once cooled, grind them into paste with tamarind and adding enough water.

Heat oil in a pan add popu ingredients and fry, once done add curry leaves, red chillies and fry, then add in ground paste and stir-cook for a min. Now add cooked dal mixture and mix well.

Add 1/2 cup of water, enough salt, turmeric powder and mix well, continue to cook for a couple of mins. Finally add chopped coriander leaves and stir well. Now spicy and tasty mixed veg kootu is ready, transfer into a serving bowl and serve hot with rice or roti.
