Spinach Dumplings / Palakura Punugulu / Spinach Bondalu - How to make Palakura Punugulu

1 cup Idly Batter
1 sp Rice Flour
1/2 cup chopped Spinach/Palakura
2 sp grated Carrot
1 Onion finely chopped
2 Green Chillies finely chopped
few chopped Coriander Leaves
few chopped Curry Leaves
1 pinch Cooking Soda
Salt to taste
Oil for deep fry
In a mixing bowl add all ingredients (except oil) and mix well, now the punugulu batter is ready.
Heat oil in a frying pan, when hot take small portion of the mixed spinach batter and drop them into the hot oil. Once the punugulu turn dark golden brown then remove from the hot oil and place them on a paper towel to drain excess oil. Repeat the same process with the remaining batter.
Now spinach dumplings/punugulu are ready to serve, serve hot with tomato ketchup & a cup of coffee.
