For Popu : Combine the chopped brinjal, mango pieces, onion, green chillies in a bowl and pressure cook with 1 cup of water for 3 whistles. When done turn off the flame and allow it cool for a couple of mins. After that remove the lid and mix well. Heat oil in a pan add popu ingredients and fry, once done add curry leaves and stir. Then add in mashed brinjal mixture, turmeric powder, red chilli powder, salt and cook. Now add sambar powder, jaggery and mix well. Let it cook for a while, then turn off the flame. Now eggplant mango thick stew/vankaya mamidikaya mudda pulusu is ready, transfer into a serving bowl and serve along with rice and dal.Ingredients
