Stuffed Brinjal Curry With Coriander Leaves / Kothimeera Gutti Vankaya Kura - Stuffed Curries

3 no Brinjal/Vankayalu/Eggplant
1 small cup chopped Coriander Leaves
2 Green Chillies
1 pinch Turmeric Powder
2 sp Besan/Gram Flour
Salt to taste

Clean, wash and finely chop fresh coriander leaves and grind along with green chilies into a coarse paste, then add besan, salt, turmeric powder and blend it again, keep aside.
First cut the brinjals crown and wash them thoroughly, cut brinjals into 4 pieces without separating, now stuff the prepared coriander paste into each brinjal and keep aside
Heat oil in a pan, when hot place the stuffed brinjals carefully. Cover with a flat plate and pour 1/2 cup of water on the plate and cook on medium heat, gently turn brinjals once or twice. Once the brinjals/egg plants are fully cooked, then remove from the flame and transfer into a serving bowl.
Now stuffed brinjal curry with coriander leaves are ready, garnish with fresh coriander leaves and serve hot.
