Ingredients
- 1 no Drumstick/Munakkaya
- 3 no Potatoes/Aloo
- 2 no Tomatoes
- 2 Green Chillies chopped lenghwise
- 1 sp Red Chilli Powder
- 1 pinch Turmeric Powder
- 1 sp Coriander Powder
- enough Salt
for Popu :
- 1/2 sp Mustard Seeds
- 1/4 sp Cumin Seeds
- 1 pinch Hing
- 1 Red Chilli crocked
- few Curry Leaves
- chopped Coriander Leaves
- 3 sp Oil
Instructions
Wash, peel and chop potatoes into small chunks, wash and chop the drumstick into 2 inch pieces, combine and cook them on stove top with little salt and turmeric powder.
Wash tomatoes and cut into chunks, place them in a blender and blend until smooth puree.
Heat oil in a pan add popu ingredients and fry, once done add chopped green chillies, curry leaves and fry for a while.
Then add tomato puree, enough salt, turmeric powder and cook for a couple of mins till the raw smell leaves and oil separates.
Add in boiled drumstick+ potatoes along with its water, add red chilli powder, coriander powder and chopped coriander leaves, mix well and cook on medium flame for a couple of mins. Now drumstick potato sabji/aloo munakkaya kura is ready, turn off the flame and transfer into a serving bowl and serve with rice and roti.
