For Paste : For Popu : Wash and cut watermelon into big chunks, then remove all the red part and keep aside. Do not throw away the rind/white part of watermelon. Peel the green outer skin from the pieces and cut the rind into medium size pieces and cook them little salt and keep aside. In the mean time, blend all the paste ingredients into a smooth paste with little water. Place buttermilk in a bowl, then add the ground paste, salt to buttermilk and mix well. Heat oil in a khadai, when hot add popu ingredients and fry, once done add curry leaves and fry for 30 secs, then pour the buttermilk mix, red chilli powder, turmeric powder and cook. Then add cooked watermelon rind pieces and continue to cook on medium flame for a couple of mins, stirring continuously. Finally add chopped coriander leaves and mix well. Turn off the flame and transfer into a serving bowl. Now watermelon rind buttermilk stew/puchakaya majjiga pulusu is ready, serve hot with steamed rice. Ingredients
