Ingredients
- 1 small cup Toor Dal
- 3 no Brinjal/Vankayalu
- 1 no Tomato
- 2 Green Chillies
- 1 pinch Turmeric Powder
- 1 sp Red Chilli Powder
- 1 small piece Tamarind
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/4 sp Cumin Seeds
- 1 Red Chilli crocked
- 1 pinch Hing
- 2 sp Oil
- few Curry Leaves
- chopped Coriander Leaves
Instructions
Wash the brinjal well, chop them into small pieces and put them in water. Wash tomato, green chillies and chop into small pieces and keep aside. Wash toor dal in a bowl and place chopped brinjal, tomato, green chillies and tamarind.
Then pressure cook with 1 cup of water for 3 whistles, after that allow it to cool for a couple of mins, once done remove the lid and mix well.
Heat oil in a pan add popu ingredients and fry, once done add curry leaves and fry for a few secs. Then add cooked dal mixture and mix well, next add salt, turmeric powder, red chilli powder and let it cook for a couple of mins on medium flame.
Finally add chopped coriander leaves and mix well, turn off the flame and transfer into a serving bowl. Now vankaya tomato Pappu/brinjal tomato dal is ready. Serve with rice or roti.
