Small Madatha Kaja / Chitti Kajalu – How to make Small Kaja – Diwali Sweet Recipe
Ingredients
- 1 cup All purpose Flour / Maida
- 2 sp Ghee or Dalda
- 1 pinch Cooking Soda
- Oil for deep fry
- 3/4 cup Sugar
- 1 pinch Elaichi Powder
- 3/4 cup Water for syrup
- 2 sp Rice Flour
- 2 sp Ghee

Instructions
- Take all purpose flour in a mixing bowl add cooking soda, ghee and mix well. Now add enough water and make it to a smooth dough, cover the dough and allow it to rest for at least 30 mins. After that Knead well and divide the dough into balls.
- In a small bowl mix rice flour with ghee and keep aside. In the meantime, boil sugar and water together to make it a syrup (one string) add elaichi powder and keep aside.
- Take one dough ball and press it into a thin chapathi, then smear with rice flour and ghee paste, then roll it a long rope shape with hands. Now cut the rope into 1 inch pieces, then press them slightly with finger and keep aside. Do the same with the remaining dough ball.
- Heat oil in a pan, when hot deep fry them in hot oil on low flame until they turn golden brown, once done remove from the oil and drop them into the sugar syrup. Let them sit for a few minutes in sugar syrup then remove from the syrup and place on to a plate to dry, Now diwali sweet recipe small kajalu are ready, when cool store them in an airtight container.
