Kodo Millet Coriander Rice/Arikalu Cilantro Rice/Kodo Millet Kothimeera Rice-Millet Recipes

Ingredients

  • 1 small cup Kodo Millet/Arikalu
  • 1 Onion finely chopped
  • 1/4 sp Turmeric Powder
  • few Fried Cashew Nuts
  • 1/2 sp Cumin Seeds
  • Salt to taste
  • 2 Red Chillies
  • 3 sp Oil
  • For Paste :
  • 1/2 cup chopped Kothimeera/Coriander Leaves
  • 1/4 cup chopped Pudina/Mint Leaves
  • 2 Green Chillies
  • 1 Tomato chopped
  • 3 Garlic Cloves
  • 1 sp chopped Ginger

Instructions

  1. Wash and soak kodo millet for 10 mins and then cook in a pressure cooker or in a rice cooker with two cups of water. In the meantime grind into a paste with above paste ingredients and keep aside.
  2. Heat oil in a pan add cumin seeds, red chillies and fry for 30 secs, then add chopped onion and stir-fry until onions are translucent. To this add ground coriander paste and mix it well, add turmeric powder and cook.
  3. Cook for a couple of mins on low flame, then add fried cashew nuts, cooked kodo millet rice, enough salt and mix everything well. Simmer on heat for a min then turn off the flame and transfer into a serving bowl. Now healthy breakfast/lunch recipe kodo millet coriander rice is ready to serve, serve hot with fresh curd/yogurt.
