Bendakaya Tomato Kura/Okra Tomato Sabji/Bhindi Tomato Curry
Ingredients
- 1 cup chopped Lady's Finger/Bhindi
- 2 Tomatoes finely chopped
- 1 Onion chopped
- 2 Green Chillies chopped
- 1/2 sp Ginger Garlic Paste
- 1 sp Coriander Powder
- 1 sp Red Chilli Powder
- 1 pinch Turmeric Powder
- 1/2 sp Garam Masala Powder
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/2 sp Urad Dal
- 1/2 sp Chana Dal
- 1 Red Chilli
- few Curry Leaves
- chopped Coriander Leaves
- 6 sp Oil

Instructions
- Heat oil in a pan add chopped bhindi and fry till all the bhindi pieces are cooked completely, then drain them and keep aside.(fry in small batches)
- Add popu ingredients to the same pan and fry, once done add curry leaves, chopped green chillies, onion and stir-fry till the onions become transparent.
- Add ginger garlic paste and fry for 30 secs then add tomato pieces and cook, now add salt, turmeric powder, coriander powder, red chilli powder & mix it well.
- Add a little amount of water and cook till the tomatoes are well cooked, then add fried bhindi pieces, garam masala powder and stir-fry for a couple of mins on low-medium flame.
- Lastly add chopped coriander leaves and mix well, now bhindi tomato curry is ready, turn off the heat and transfer into a serving bowl and serve with rice or roti.
