Bendakaya Tomato Kura/Okra Tomato Sabji/Bhindi Tomato Curry

Ingredients

  • 1 cup chopped Lady's Finger/Bhindi
  • 2 Tomatoes finely chopped
  • 1 Onion chopped
  • 2 Green Chillies chopped
  • 1/2 sp Ginger Garlic Paste
  • 1 sp Coriander Powder
  • 1 sp Red Chilli Powder
  • 1 pinch Turmeric Powder
  • 1/2 sp Garam Masala Powder
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Urad Dal
  • 1/2 sp Chana Dal
  • 1 Red Chilli
  • few Curry Leaves
  • chopped Coriander Leaves
  • 6 sp Oil

Instructions

  1. Heat oil in a pan add chopped bhindi and fry till all the bhindi pieces are cooked completely, then drain them and keep aside.(fry in small batches)
  2. Add popu ingredients to the same pan and fry, once done add curry leaves, chopped green chillies, onion and stir-fry till the onions become transparent.
  3. Add ginger garlic paste and fry for 30 secs then add tomato pieces and cook, now add salt, turmeric powder, coriander powder, red chilli powder & mix it well.
  4. Add a little amount of water and cook till the tomatoes are well cooked, then add fried bhindi pieces, garam masala powder and stir-fry for a couple of mins on low-medium flame.
  5. Lastly add chopped coriander leaves and mix well, now bhindi tomato curry is ready, turn off the heat and transfer into a serving bowl and serve with rice or roti.
