Gobi Carrot Coconut Curry / Cauliflower Carrot Kobbari Kura
Ingredients
- 1/2 cup chopped Cauliflower
- 1/2 cup chopped Carrot
- 1 Tomato finely chopped
- 1 Onion finely chopped
- 1/4 sp Turmeric Powder
- 1 sp Red Chilli Powder
- 1 sp chopped Coriander Leaves
- Salt to taste
- 1 Onion roughly chopped
- fistful Fresh Coconut Pieces
- 1/2 sp Mustard Seeds
- 1/2 sp Urad Dal
- 1 Red Chilli crocked
- few Curry Leaves
- 2 sp Oil

Instructions
- Make a course paste with chopped onion and coconut pieces and keep aside. pressure cook carrot, cauliflower with turmeric powder, salt and enough water for 2 whistles.
- When the cooker cool remove the lid and drain them. Heat oil in a pan add popu ingredients and fry. Once done add curry leaves, chopped onion and fry until onions are translucent. To this add chopped tomato and mix.
- Stir and cook till soft, add turmeric powder, red chilli powder, little salt and mix well. Then add in ground coconut onion paste.
- Mix everything well and cook for a while. Now mix veggies in this onion mixture and coat it well. Continue to cook for a couple of mins on low flame. When done turn off the flame and transfer into a serving bowl. Now gobi carrot onion fry is ready, garnish with coriander leaves and serve.
