Gobi Carrot Coconut Curry / Cauliflower Carrot Kobbari Kura

Ingredients

  • 1/2 cup chopped Cauliflower
  • 1/2 cup chopped Carrot
  • 1 Tomato finely chopped
  • 1 Onion finely chopped
  • 1/4 sp Turmeric Powder
  • 1 sp Red Chilli Powder
  • 1 sp chopped Coriander Leaves
  • Salt to taste
  • For Paste :
  • 1 Onion roughly chopped
  • fistful Fresh Coconut Pieces
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Urad Dal
  • 1 Red Chilli crocked
  • few Curry Leaves
  • 2 sp Oil

Instructions

  1. Make a course paste with chopped onion and coconut pieces and keep aside. pressure cook carrot, cauliflower with turmeric powder, salt and enough water for 2 whistles.
  2. When the cooker cool remove the lid and drain them. Heat oil in a pan add popu ingredients and fry. Once done add curry leaves, chopped onion and fry until onions are translucent. To this add chopped tomato and mix.
  3. Stir and cook till soft, add turmeric powder, red chilli powder, little salt and mix well. Then add in ground coconut onion paste.
  4. Mix everything well and cook for a while. Now mix veggies in this onion mixture and coat it well. Continue to cook for a couple of mins on low flame. When done turn off the flame and transfer into a serving bowl. Now gobi carrot onion fry is ready, garnish with coriander leaves and serve.
