Simple Brinjal Curry Recipe / Eggplant Sabji / Vankaya Kura
Ingredients
- 1/4 kg Vankayalu/Brinjal
- 1 pinch Turmeric powder
- 2 sp Chutney powder/Kura Podi
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/2 sp Chana Dal
- 1/2 sp Urad Dal
- 1 Red Chilli crocked
- 3 sp Oil
- Curry leaves

Instructions
- Wash and cut brinjal into small pieces and keep aside.
- Always preserve the cut brinjal in water and add a pinch of salt.
- Heat oil in a khadai add popu ingredients and fry.
- When they splutter add curry leaves and chopped brinjal and stir well.
- Add turmeric powder, salt and stir, sprinkle little water and mix well.
- Cover and cook on medium flame, keep checking in between.
- The brinjal pieces should become tender add chutney powder/kura podi and stir well.
- Stir well all the curry well coated with the powder, continue to cook on low flame with cover.
- Cook one more min turn off heat and transfer into a serving bowl.
- Now simple brinjal curry is ready to serve, serve with white rice.
