Curry Leaves Onion Rice / Onion and Curry Leaves Rice / Karivepaku Ullipaya Sadam

Ingredients

  • 1 cup Cooked Rice
  • 1 Onion chopped
  • 2 Red Chillies
  • 1 sp chopped Garlic
  • 1 sp Lemon Juice (optional)
  • Salt to taste
  • 3 sp Oil
  • For Curry Leaves Powder :
  • 1/2 cup Curry Leaves
  • fistful dry Coconut Pieces
  • 5-6 Dry Red Chillies
  • 2 Garlic Cloves
  • 1/2" inch Cinnamon Stick
  • 2 Cloves
  • 1/2 sp Oil

Instructions

  1. Heat 1/2 sp oil in a pan and add curry leaves powder ingredients except curry leaves and fry for a min, then add curry leaves and stir-fry till the leaves change its color then turn off the flame and keep aside to cool
  2. Once cooled grind them into a coarse powder, then transfer to a plate.
  3. Meanwhile, put the cooked rice in a mixing bowl and set aside, heat oil in a pan add curry leaves, chopped onion, garlic, red chillies and fry until the onions are tender.
  4. Add ground curry leaves powder and mix everything well, fry it a minute on low-medium flame.
  5. Then add cooked rice, salt to the pan and mix everything well until combined, and fry it high flame for a couple of mins then turn off the flame. Now curry leaves onion rice is ready, transfer into a serving bowl and serve hot.
