Eggplant Sabzi Recipe / Brinjal Bajji / Vankaya Bajji
Ingredients
- 6 nos Brinjals/Vankayalu
- 1/2 sp Red Chilli Powder
- 1 pinch Turmeric Powder
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/2 sp Chana Dal
- 1/2 sp Urad Dal
- 1 crocked Red Chilli
- 4 sp Oil
- Curry leaves

Instructions
- Wash the brinjals with water and trim the stems, heat 2 sp oil in a pan add brinjals and stir, cover and cook until done.
- When done remove from the pan and place them onto a plate and allow it to cool.
- Once cooled remove the skin of the brinjals and keep the pulp in a bowl, add red chilli powder, salt, turmeric powder and mash it well.
- Heat remaining oil in a small frying pan add popu ingredients and fry, when they splutter add curry leaves and fry for a while, then turn of heat.
- Now add the fried popu to brinjal sabzi and mix it well, now vankaya bajji is ready, serve with steamed white rice or roti..
