Capsicum Coconut Masala Rice / Bell Pepper Coconut Pulav / Capsicum Coconut Pulav
Ingredients
- 1 cup Rice
- 2 medium size Capsicum
- 1 small cup Fresh Coconut
- 1/4 sp Turmeric Powder
- 2 sp Lemon Juice
- Salt to taste
- 2 sp Coriander Seeds
- 1/2 sp Cumin Seeds
- 2 sp Chana Dal
- 2 sp Urad Dal
- 4 Cloves / Lavangalu
- 1 inch Cinnamon Stick
- 4 or 5 Dry Red Chillies
- 1/2 sp Oil
- 1/2 sp Mustard Seeds
- 1 sp Chana Dal
- 1 sp Urad Dal
- 2 Red Chillies
- fistful Peanuts
- 1 pinch Hing
- 3 sp Oil
- Coriander Leaves
- Curry Leaves

Instructions
- Wash and cook the rice and keep it aside to cool down. Wash and chop capsicum into medium size pieces and set aside.
- Meanwhile in a pan fry masala ingredients with little oil until brown and grind into a coarse powder.
- Heat oil in a khadai add popu ingredients and fry then add diced capsicum and stir, cover and cook on low flame until peppers are soft.
- Now add grated coconut, turmeric powder and stir, fry until light brown then add ground powder and stir well.
- Add the cooked rice, salt and mix well, fry for few mins next add lemon juice and mix well, turn off the heat.
- finally garnish with chopped coriander leaves and stir, close the lid for 1 minute.
- Capsicum coconut rice is ready, serve hot with onion raita (curd chutney).
