Gutti Vankaya Kura / Stuffed Brinjal with Curry Powder / Stuffed Eggplant Curry

Ingredients

  • 6 nos Brinjal/Vankayalu/Eggplant
  • 4 sp Chana Dal
  • 4 sp Urad Dal
  • 1 sp Coriander Seeds
  • 6 Red Chillies
  • 1 inch Tamarind flake
  • 3 sp grated Dry Coconut/Coconut Pieces
  • 5 sp Oil
  • Salt to taste

Instructions

  1. Heat 1 sp oil in frying pan add chana dal, urad dal, coriander seeds, red chillies and stir-fry them on a low flame until it turns golden brown in color, then remove from the pan.
  2. When cool grind them along with salt, tamarind, coconut into powder.
  3. Slit brinjals into four without separating, stuff some amount of the prepared powder in each brinjal.
  4. Now heat remaining oil in a pan and carefully place each stuffed brinjal into it, cover with a flat lid and pour 1/2 cup of water on it.
  5. Keep checking in between, when they are cooked properly, then remove from the flame.
  6. Transfer into a serving bowl, now stuffed brinjal curry/gutti vankaya kura is ready to serve.
