Gutti Vankaya Kura / Stuffed Brinjal with Curry Powder / Stuffed Eggplant Curry
Ingredients
- 6 nos Brinjal/Vankayalu/Eggplant
- 4 sp Chana Dal
- 4 sp Urad Dal
- 1 sp Coriander Seeds
- 6 Red Chillies
- 1 inch Tamarind flake
- 3 sp grated Dry Coconut/Coconut Pieces
- 5 sp Oil
- Salt to taste
Instructions
- Heat 1 sp oil in frying pan add chana dal, urad dal, coriander seeds, red chillies and stir-fry them on a low flame until it turns golden brown in color, then remove from the pan.
- When cool grind them along with salt, tamarind, coconut into powder.
- Slit brinjals into four without separating, stuff some amount of the prepared powder in each brinjal.
- Now heat remaining oil in a pan and carefully place each stuffed brinjal into it, cover with a flat lid and pour 1/2 cup of water on it.
- Keep checking in between, when they are cooked properly, then remove from the flame.
- Transfer into a serving bowl, now stuffed brinjal curry/gutti vankaya kura is ready to serve.
