Raw Mango Coconut Rice / Mamidikaya Kobbari Annam

Ingredients

  • 1 cup cooked Rice
  • 1/2 cup grated Fresh Coconut
  • 1/4 cup grated Mango
  • 2 Green Chillies slit lengthwise
  • fistful Peanuts
  • 1 pinch Inguva/Hing
  • Salt to tast
  • For Popu :
  • 1 sp Mustard Seeds
  • 1/2 sp Cumin Seeds
  • 1 Red Chilli crocked
  • Curry Leaves
  • 2 sp Oil

Instructions

  1. Heat oil in a pan add popu ingredients and fry, add peanuts and fry for about 30 sec, then add green chillies, curry leaves and stir.
  2. Fry for a min and add grated coconut, grated green mango and stir well.
  3. Cook for a couple of mins on low flame, then add in cooked rice, salt and mix very well.
  4. Turn off the heat and cover with a lid for a while. After that transfer into a serving bowl, now pachi mamidikaya kobbari annam/mango coconut rice is ready to serve.
