Aloo Tomato Rice Recipe / Potato Tomato Rice with Leftover Rice / Aloo Rice Bath

Ingredients

  • 1 cup cooked Rice
  • 1 Aloo peeled and chopped
  • 2 Tomatoes chopped
  • 3 Green Chilles chopped
  • 1 Onion finely chopped
  • 1/2 sp Ginger Garlic Paste
  • 1/4 sp Turmeric Powder
  • 1 inch Cinnamon stick
  • 3 Elaichi pods
  • 3 Cloves
  • Salt to taste
  • 3 sp Oil
  • Curry Leaves
  • Coriander Leaves

Instructions

  1. Heat oil in a pan add cloves, elaichi, cinnamon and fry for 30 secs, add chopped onion, green chillies, curry leaves and fry for a while.
  2. When the onions are tender add ginger garlic paste and stir, add chopped aloo and stir, sprinkle little water and mix well, cover and cook.
  3. When the aloo pieces are 3/4 done add chopped tomatoes, turmeric powder and mix well, let it cook for a couple of mins, then add cooked rice, salt and mix everything well.
  4. Now aloo tomato rice is ready, garnish with chopped coriander leaves, serve hot with onion raita.
