Brinjal Lady’s Finger Chutney Recipe / Vankaya Bendakaya Pachadi / Okra eggplant chutney
Ingredients
- 2 no Brinjal / Vankayalu
- 5 no Lady's Finger / Bendakayalu
- 6 Green Chillies
- 1 big Onion roughly chopped
- 1 Pinch Turmeric Powder
- 1 sp Tamarind pulp
- Salt to taste
- 1/2 Mustard Seeds
- 1/4 Cumin Seeds
- 1 Red Chilli crocked
- Curry Leaves
- 2 sp Oil

Instructions
- Wash bringal, lady's finger and chop them into pieces.
- Boil water in a bowl add brinjal, lady finger, green chillies and cook until soft.
- Once done turn off the heat and allow it to cool, when done separate green chillies from the cooked vegetables and keep aside.
- Grind green chillies, tamarind pulp, salt, turmeric powder, next add onion pieces and grind slightly, now add cooked pieces and pulse for 2-3 secs
- Heat oil in a pan add popu and fry, when done add curry leaves, now add it to ground chutney and mix well.
- It's a traditional chutney in rural areas, they do not add popu.
- Serve it with steamed white rice . It's very tasty & yummy.
