Carrot Chikkudu Kobbari Vepudu / Carrot Indian Broad Beans Coconut Fry – Dry Curry
Ingredients
- 1 small cup diced Carrot
- 1 small cup chopped Indian Broad Beans/Chikkudukaya Mukkalu
- 2 sp fresh Grated Coconut
- 1 Onion finely chopped
- 1 pinch Turmeric Powder
- 1 sp Red Chilli Powder
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/2 sp Chana Dal
- 1/2 sp Urad Dal
- 1 Red Chilli crocked
- Curry Leaves
- 2 sp Oil

Instructions
- Combine diced carrot, chopped broad beans in a bowl and pressure cook with 1/2 cup of water along with turmeric powder and salt. Once done turn off the flame and wait for few mins, after that drain them.
- Heat oil in a pan add popu ingredients and fry, once done add curry leaves, chopped onion and fry until the onions are translucent. Add cooked carrot mixture and mix well, continue to cook for a couple of mins.Then add grated coconut, red chilli powder and mix everything well, cook on low flame for 1 min. Now carrot chikkudu kobbari vepudu is ready, transfer into a serving bowl and serve.
