Usiri kaya Pulihora Recipe/Amla Rice/Gooseberry Rice - Pulihora Recipes
Ingredients
- 1 cup Cooked Rice
- 5 or 6 big size Usirikayalu
- 3 Green Chillies chopped length-wise
- 1/4 sp Turmeric Powder
- 4 or 5 Cashew Nuts
- few Peanuts
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/2 sp Chana Dal
- 1/2 sp Urad Dal
- 3 Red Chillies
- few Curry Leaves
- 1 pinch Inguva
- 3 sp Oil

Instructions
- Wash usiri kayalu and pat dry with a clean cloth, then grate them with a coconut grater and keep aside.
- Heat oil in a khadai add peanuts, cashews and fry till light golden brown and remove from the pan and set aside.
- Add popu ingredients to the same pan and fry, once done add curry leaves, chopped green chillies and stir- fry for 30 sec.
- Add grated amla/usiri turumu, turmeric powder and mix well, cover and cook on low heat for 2 mins or till it becomes soft.
- Add cooked rice, enough salt and mix everything thoroughly, then add fried nuts and mix well, turn off the heat and let stand for 5 mins.
- Transfer into a serving bowl, now festival recipe usiri kaya pulihora is ready to serve.
