Usiri kaya Pulihora Recipe/Amla Rice/Gooseberry Rice - Pulihora Recipes

Ingredients

  • 1 cup Cooked Rice
  • 5 or 6 big size Usirikayalu
  • 3 Green Chillies chopped length-wise
  • 1/4 sp Turmeric Powder
  • 4 or 5 Cashew Nuts
  • few Peanuts
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/2 sp Chana Dal
  • 1/2 sp Urad Dal
  • 3 Red Chillies
  • few Curry Leaves
  • 1 pinch Inguva
  • 3 sp Oil

Instructions

  1. Wash usiri kayalu and pat dry with a clean cloth, then grate them with a coconut grater and keep aside.
  2. Heat oil in a khadai add peanuts, cashews and fry till light golden brown and remove from the pan and set aside.
  3. Add popu ingredients to the same pan and fry, once done add curry leaves, chopped green chillies and stir- fry for 30 sec.
  4. Add grated amla/usiri turumu, turmeric powder and mix well, cover and cook on low heat for 2 mins or till it becomes soft.
  5. Add cooked rice, enough salt and mix everything thoroughly, then add fried nuts and mix well, turn off the heat and let stand for 5 mins.
  6. Transfer into a serving bowl, now festival recipe usiri kaya pulihora is ready to serve.
