Vegetable Poha Upma Recipe/Mixed Vegetable Poha – how to make Veg Poha
Ingredients
- 11/2 cup Thick Poha/Beaten Rice
- 1 Onion finely chopped
- 2 Green Chillies chopped
- 1/4 cup chopped Carrot
- 1/4 cup chopped Capsicum
- 1/4 cup chopped Potato
- 1/4 cup Beans
- 14 sp Turmeric Powder
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/4 sp Cumin Seeds
- 2 Red Chillies
- 2 sp Oil
- few Curry Leaves
- chopped Coriander Leaves

Instructions
- Wash and chop all the vegetables into small cubes and keep aside, wash and soak poha for 2 mins, then squeeze extra water from it and set aside.
- Heat oil in a kadai add popu ingredients and fry, once done add curry leaves, green chillies, onion and stir.
- Cook over medium heat until the onions are tender, now add the diced vegetables except capsicum and stir.
- Sprinkle little water and cook with cover, after the veggies are 3/4 done add in chopped capsicum and stir - cook for 1-2 mins on low flame with cover.
- When done add turmeric powder, salt and stir, then add squeezed poha, chopped coriander and mix well, let it cook for a couple of mins on low flame with cover.
- Now vegetable poha is ready, transfer into a serving bowl, garnish with chopped fresh coriander leaves and serve hot.
