Vegetable Poha Upma / Mixed Vegetable Poha – How to Make Veg Poha

  • 11/2 cup Thick Poha/Beaten Rice
  • 1 Onion finely chopped
  • 2 Green Chillies chopped
  • 1/4 cup chopped Carrot
  • 1/4 cup chopped Capsicum
  • 1/4 cup chopped Potato
  • 1/4 cup Beans
  • 14 sp Turmeric Powder
  • Salt to taste
  • For Popu :
  • 1/2 sp Mustard Seeds
  • 1/4 sp Cumin Seeds
  • 2 Red Chillies
  • 2 sp Oil
  • few Curry Leaves
  • chopped Coriander Leaves


  1. Wash and chop all the vegetables into small cubes and keep aside, wash and soak poha for 2 mins, then squeeze extra water from it and set aside.
  2. Heat oil in a kadai add popu ingredients and fry, once done add curry leaves, green chillies, onion and stir.
  3. Cook over medium heat until the onions are tender, now add the diced vegetables except capsicum and stir.
  4. Sprinkle little water and cook with cover, after the veggies are 3/4 done add in chopped capsicum and stir - cook for 1-2 mins on low flame with cover.
  5. When done add turmeric powder, salt and stir, then add squeezed poha, chopped coriander and mix well, let it cook for a couple of mins on low flame with cover.
  6. Now vegetable poha is ready, transfer into a serving bowl, garnish with chopped fresh coriander leaves and serve hot.
