Achari Soya Pulav Recipe / Soya Pulav with Mango Pickle

Ingredients

  • 1 cup Rice
  • 1/4 cup Soya Chunks
  • 2 sp Mango Pickle ( Avakaya Pickle )
  • 2 Green Chillies chopped lenghwise
  • 1 big Onion chopped
  • 1/2 sp Ginger Garlic Paste
  • 1/2 sp Red Chilli Powder
  • 1 pinch Turmeri Powder
  • 1/2 sp Coriander Powder
  • 2 sp Fresh Yogurt
  • Salt to taste
  • For Popu :
  • 1/2 sp Cumin Seeds
  • 1 pinch Inguva
  • 1 sp coarsely ground Garam Masala
  • 4 sp Oil
  • chopped Coriander Leaves
  • chopped Mint Leaves

Instructions

  1. Wash and soak rice for 10 mins and keep aside, wash and soak soya chunks in hot water for 15 mins and set aside.
  2. In a separate bowl take yogurt add turmeric, red chilli, coriander powders, mango pickle and mix well, keep aside.
  3. Heat oil in a pan add cumin seeds, inguva and fry, then add coarsely ground garam masala, chopped onion, green chillies and fry.
  4. Once done add ginger garlic paste and fry for 30 secs, then add yogurt mix and stir well, cook for 1 min on low flame.
  5. Add squeezed soya chunks and stir-fry for 1 min, then add chopped mint, coriander leaves and stir, finely add soaked rice and mix very well.
  6. Transfer the whole content to a rice cooker bowl with 2 cups of water, enough salt and set to cook.
  7. When cooked completely remove from the bowl. Now achari soya pulav is ready to serve, serve hot with onion raita.
