Brinjal Tomato Curry Recipe / Vankaya Tomato Kura
Ingredients
- 1/4 kg Brinjal/Vankayalu
- 2 Green Chillies chopped
- 1 Onion chopped
- 1 Tomato chopped
- 1/2 sp Ginger Garlic paste
- 1 pinch Turmeric powder
- 1/2 sp Red chilli powder
- Salt to taste
- 1/2 sp Mustard Seeds
- 1/2 sp Chana Dal
- 1/2 sp Urad Dal
- 1 Red Chilli crocked
- Curry leaves
- 2 sp Oil

Instructions
- Wash and cut brinjal into small pieces and keep aside, always preserve the chopped brinjal in water and add a pinch of salt.
- Heat oil in a fry pan add popu ingredients and fry, once done add curry leaves, green chillies, onion pieces and stir-fry till the onions turn soft.
- Add ginger garlic paste and fry for 30 secs then add chopped tomato and stir-cook for a while.
- Next add chopped brinjal/vankaya mukkalu, salt, turmeric, red chilli powder and stir well, sprinkle little water and mix well, cook on medium flame with lid .
- Keep checking in between, when the curry is done then turn off flame and, transfer into a serving bowl.
- now brinjal tomato kura/vankaya tomato curry is ready to serve, serve with rice or roti.
