Brinjal Fry Recipe / Egg Plants Curry / Vankaya Vepudu
Ingredients
- 1/4 kg Brinjal/Vankayalu
- 1/2 sp Red Chilli Powder
- 1 pinch Turmeric Powder
- Salt to taste
- 5 sp Oil
- Curry Leaves
Instructions
- Wash and cut brinjal into small and thin pieces.
- Apply salt and turmeric powder and keep it aside.
- After 5 mins squeeze the water from brinjal pieces.
- Now heat oil in a pan, when hot add the squeezed pieces
- Fry in medium heat, keep checking in between.
- When it done, add red chilli powder and curry leaves.
- Stir well and fry for couple of mins and turn off the flame.
- Now the brinjal fry is ready, transfer into a serving bowl and serve along with sambar or rasam.
