Brinjal Fry Recipe / Egg Plants Curry / Vankaya Vepudu

Ingredients

  • 1/4 kg Brinjal/Vankayalu
  • 1/2 sp Red Chilli Powder
  • 1 pinch Turmeric Powder
  • Salt to taste
  • 5 sp Oil
  • Curry Leaves

Instructions

  1. Wash and cut brinjal into small and thin pieces.
  2. Apply salt and turmeric powder and keep it aside.
  3. After 5 mins squeeze the water from brinjal pieces.
  4. Now heat oil in a pan, when hot add the squeezed pieces
  5. Fry in medium heat, keep checking in between.
  6. When it done, add red chilli powder and curry leaves.
  7. Stir well and fry for couple of mins and turn off the flame.
  8. Now the brinjal fry is ready, transfer into a serving bowl and serve along with sambar or rasam.
